- In a large pot, cook the Italian sausage over medium heat until browned, breaking it into small pieces.
- Add the onion and garlic to the pot. Cook until the onion is soft, about 3 minutes.
- Pour in the chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat to a simmer and stir in the heavy cream and tortellini. Cook until the tortellini is tender, about 5-7 minutes.
- Add the spinach and cook until wilted, about 2 minutes.
- Serve hot.
