Creamy Chicken Gnocchi Soup

Ingredients
  

For the Soup
  • 2 tbsp olive oil
  • 1 lb boneless chicken breast diced
  • 1 medium onion chopped
  • 2 carrots diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb gnocchi
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until no longer pink, about 5 minutes.
  2. Add chopped onion, diced carrots, and minced garlic. Cook for 3 minutes until vegetables soften.
  3. Pour in chicken broth and bring to a simmer. Stir in heavy cream, gnocchi, thyme, salt, and pepper.
  4. Simmer for 5-7 minutes until gnocchi is tender and soup thickens slightly.
  5. Serve hot.
