- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until no longer pink, about 5 minutes.
- Add chopped onion, diced carrots, and minced garlic. Cook for 3 minutes until vegetables soften.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream, gnocchi, thyme, salt, and pepper.
- Simmer for 5-7 minutes until gnocchi is tender and soup thickens slightly.
- Serve hot.
