- Heat olive oil in a large skillet over medium-high heat. Add chicken, salt, and pepper. Cook until browned and cooked through, about 5-6 minutes. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Pour in heavy cream, chicken broth, thyme, and oregano. Stir to combine and bring to a simmer.
- Add gnocchi to the skillet. Cook for 3-4 minutes, stirring occasionally, until gnocchi is tender and sauce thickens.
- Return chicken to the skillet. Stir in Parmesan cheese and parsley. Cook for 1-2 minutes until heated through.
