Method
- Melt butter in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Add broccoli and broth. Bring to a boil, then reduce heat and simmer for 10 minutes until broccoli is tender.
- Use a blender or immersion blender to puree the soup until smooth.
- Return the soup to the pot. Stir in heavy cream and cheddar cheese until melted and smooth.
- Season with salt and pepper. Serve warm.
