- Heat olive oil in a large pot over medium-high heat.
- Add beef and brown on all sides.
- Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
- Pour in beef broth, salt, and pepper. Bring to a boil, then reduce heat and simmer, covered, for at least 30 minutes, or until beef is tender.
