Ingredients
  

For the Stew
  • 1 kg beef chuck roast cut into 1-inch pieces
  • 1 cup beef broth
  • 1/2 cup red wine optional
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 medium carrots peeled and chopped
  • 2 medium potatoes peeled and cubed
  • 1 large onion chopped
For Serving
  • 1/4 cup fresh parsley chopped

Method
 

  1. Place the beef in your crockpot.
  2. In a bowl, whisk together the beef broth, red wine (if using), Worcestershire sauce, soy sauce, minced garlic, thyme, salt, and pepper. Pour this mixture over the beef.
  3. Add the chopped carrots, cubed potatoes, and chopped onion to the crockpot.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
  5. Stir before serving. Garnish with fresh parsley.

Notes

Serve hot with crusty bread for dipping.
