Method
- Place the beef in your crockpot.
- In a bowl, whisk together the beef broth, red wine (if using), Worcestershire sauce, soy sauce, minced garlic, thyme, salt, and pepper. Pour this mixture over the beef.
- Add the chopped carrots, cubed potatoes, and chopped onion to the crockpot.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
- Stir before serving. Garnish with fresh parsley.
