Ingredients
  

For the Soup
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 28 oz canned tomatoes crushed
  • 2 cups vegetable broth
  • 1 tsp sugar
  • 1 tsp dried basil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add crushed tomatoes, vegetable broth, sugar, basil, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Blend the soup until smooth using a blender.
