- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in canned tomatoes and vegetable broth. Stir in sugar, basil, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
- Use a blender or immersion blender to puree the soup until smooth.
- Stir in heavy cream if using. Adjust seasoning to taste.
