Ingredients
  

For the Soup
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 28 oz canned tomatoes crushed or diced
  • 2 cups vegetable broth
  • 1 tsp sugar optional
  • 1 tsp dried basil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For Serving
  • fresh basil optional
  • croutons optional

Method
 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft, about 5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in canned tomatoes and vegetable broth. Stir in sugar, dried basil, salt, and black pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
  5. Use a blender to puree the soup until smooth. Return to the pot and reheat if needed.
  6. Serve hot, garnished with fresh basil and croutons if desired.
