- Heat olive oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in crushed tomatoes, vegetable broth, sugar, basil, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes, stirring occasionally.
- Blend the soup until smooth using a blender or immersion blender.
- Serve hot, optionally garnished with fresh basil or a drizzle of cream.
