- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3 minutes.
- Add ground beef to the skillet. Cook, breaking it apart with a spoon, until browned, about 5-7 minutes.
- Stir in minced garlic and taco seasoning. Cook for 1 minute until fragrant.
- Pour in water and simmer for 3-4 minutes until the mixture thickens slightly.
- Warm taco shells according to package instructions.
- Fill each taco shell with the beef mixture. Top with lettuce, tomatoes, cheese, and sour cream.
