Ingredients
  

For the Taco Filling
  • 1 lb ground beef 80/20 lean-to-fat ratio
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 1/4 cup water
For Serving
  • 8 taco shells hard or soft
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup sour cream

  • Mixing bowl

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3 minutes.
  2. Add ground beef to the skillet. Cook, breaking it apart with a spoon, until browned, about 5-7 minutes.
  3. Stir in minced garlic and taco seasoning. Cook for 1 minute until fragrant.
  4. Pour in water and simmer for 3-4 minutes until the mixture thickens slightly.
  5. Warm taco shells according to package instructions.
  6. Fill each taco shell with the beef mixture. Top with lettuce, tomatoes, cheese, and sour cream.
