Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 6 tbsp unsalted butter melted
For the Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs

Method
 

  1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom of the pan.
  3. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Pour the filling over the crust. Bake for 60 minutes or until the center is set.
  5. Let the cheesecake cool in the oven with the door slightly open for 1 hour. Then chill in the refrigerator for at least 4 hours before serving.
