- Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom of the pan.
- Bake the crust for 10 minutes, then let it cool.
- Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in sour cream until combined. Pour the filling over the crust.
- Bake for 60 minutes or until the center is set. Turn off the oven and let the cheesecake cool inside for 1 hour.
- Chill in the refrigerator for at least 4 hours before serving.
