Ingredients
  

For the Chicken
  • 2 cups cooked chicken shredded
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
For the Salad
  • 4 cups mixed greens
  • 1 orange segmented
  • 1 grapefruit segmented
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Heat olive oil in a skillet over medium heat. Add shredded chicken, thyme, and rosemary. Cook for 5 minutes, stirring occasionally. Remove from heat and let cool.
  2. In a large bowl, combine mixed greens, orange segments, grapefruit segments, red onion, and fresh parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper to make the dressing.
  4. Add the cooled chicken to the salad bowl. Drizzle with dressing and toss gently to combine.
  5. Serve immediately.
