Cinnamon Sugar Baked Donut Muffins

Ingredients
  

For the Muffins
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/3 cup buttermilk
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract
For the Cinnamon Sugar Coating
  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp unsalted butter melted

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix granulated sugar, brown sugar, egg, buttermilk, melted butter, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Divide the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes until a toothpick inserted comes out clean.
  7. Let the muffins cool slightly, then brush with melted butter and roll in the cinnamon sugar mixture.
