Ingredients
  

For the Base
  • 1 cup creamy peanut butter
  • 1/4 cup honey
  • 1 cup rolled oats
  • 1/2 cup shredded coconut optional
For the Chocolate Coating
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil

Equipment

  • Mixing bowl
  • Baking sheet
  • Parchment paper

Method
 

  1. Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, honey, rolled oats, and shredded coconut (if using). Mix until well combined.
  3. Roll the mixture into small balls and place them on the prepared baking sheet. Chill in the fridge for 10 minutes.
  4. Melt the chocolate chips and coconut oil in a microwave or double boiler, stirring until smooth.
  5. Dip each peanut butter ball into the melted chocolate, coating evenly. Return to the baking sheet.
  6. Chill for another 15 minutes or until the chocolate hardens.
