Ingredients
  

For the Salad
  • 2 cans chickpeas drained and rinsed
  • 1 cucumber diced
  • 1 red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. In a large mixing bowl, combine the chickpeas, cucumber, red bell pepper, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for up to 2 days.
