Ingredients
  

For the Chili
  • 1 lb boneless, skinless chicken breasts diced
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cans white beans drained and rinsed
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned, about 5-7 minutes.
  3. Add chopped onion and minced garlic. Cook until softened, about 3 minutes.
  4. Stir in white beans, chicken broth, cumin, oregano, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Serve hot.
