Chicken Veggie Stir Fry with Brown Rice

Ingredients
  

For the Stir Fry
  • 1 lb boneless, skinless chicken breast cut into thin strips
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cups mixed vegetables bell peppers, broccoli, carrots
  • 2 cloves garlic minced
  • 1 tsp ginger grated
For Serving
  • 2 cups cooked brown rice

Equipment

  • Large skillet or wok
  • Cutting board
  • Chef's knife

Method
 

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add chicken strips and cook until browned and cooked through, about 5-7 minutes.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add garlic and ginger. Cook for 30 seconds until fragrant.
  5. Add mixed vegetables and stir-fry for 4-5 minutes until tender-crisp.
  6. Return the chicken to the skillet. Add soy sauce and stir to combine.
  7. Serve hot over cooked brown rice.
