Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Rice
  • 2 cups white rice
  • 4 cups water

Equipment

  • Large skillet
  • Rice cooker

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces to the skillet and season with salt and pepper. Cook until golden brown and fully cooked, about 10 minutes.
  3. While the chicken cooks, rinse the rice and add it to the rice cooker with water. Cook according to the rice cooker instructions.
  4. Serve the cooked chicken over the rice.
