Ingredients
  

For the Chicken
  • 2 chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Bowl
  • 1/2 cup hummus
  • 1/4 cup olives pitted
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1/4 cup chopped parsley

Method
 

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes per side until fully cooked.
  3. Let the chicken rest for 5 minutes, then slice it.
  4. Divide the cooked quinoa between two bowls.
  5. Top each bowl with sliced chicken, hummus, olives, cucumber, and parsley.
