Ingredients
  

For the Chicken and Rice
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

  • Large skillet
  • Wooden spoon

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add onion and garlic. Cook until softened, about 3 minutes.
  4. Stir in rice, chicken broth, salt, pepper, and paprika. Bring to a boil.
  5. Return the chicken to the skillet. Reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and liquid is absorbed.
  6. Remove from heat and let stand for 5 minutes before serving.
