Ingredients
  

For the Mashed Potatoes
  • 3 lbs potatoes peeled and cubed
  • 1/2 cup butter
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Topping
  • 2 cups cheddar cheese shredded
  • 1/2 cup bacon cooked and crumbled
  • 1/4 cup green onions chopped
  • 1/2 cup sour cream

Method
 

  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and return to the pot.
  3. Add butter, milk, salt, and pepper to the potatoes. Mash until smooth.
  4. Spread the mashed potatoes evenly in the prepared baking dish.
  5. Sprinkle shredded cheddar cheese over the potatoes. Top with bacon and green onions.
  6. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Serve hot with a dollop of sour cream on top.
