Ingredients
  

For the Waffles
  • 1.5 cups cornbread mix
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup shredded cheddar cheese
  • 1 medium jalapeño finely diced, seeds removed if desired
For Serving
  • honey for drizzling

Method
 

  1. Preheat your waffle maker according to the manufacturer's instructions. Lightly grease if necessary.
  2. In a mixing bowl, combine the cornbread mix, egg, milk, and vegetable oil. Whisk until just combined. Do not overmix.
  3. Gently fold in the shredded cheddar cheese and diced jalapeño.
  4. Pour about 1/2 cup of batter onto the preheated waffle maker. Cook for 3-5 minutes, or until golden brown and cooked through.
  5. Repeat with the remaining batter.
  6. Serve the waffles warm, drizzled with honey.

Notes

You can adjust the amount of jalapeño to your spice preference. For a milder flavor, remove all seeds and membranes from the jalapeño. These waffles are also delicious with a side of butter or sour cream.
