Ingredients
  

For the Skillet
  • 1 tbsp olive oil
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 cup broccoli florets chopped
  • 1 cup white rice uncooked
  • 2 cups chicken broth
  • 1 cup cheddar cheese shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned, about 5 minutes.
  3. Stir in broccoli, rice, chicken broth, garlic powder, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.
  5. Sprinkle shredded cheddar cheese over the top, cover, and let melt for 2 minutes.
  6. Serve warm.
