Ingredients
  

For the Base
  • 1 cup cooked quinoa
  • 2 eggs
For the Veggies
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red bell pepper diced
  • 1/4 cup spinach chopped
For the Cheese
  • 1/4 cup feta cheese crumbled

Method
 

  1. Heat a skillet over medium heat and lightly grease it.
  2. Add the eggs to the skillet and scramble until fully cooked.
  3. Divide the cooked quinoa between two bowls.
  4. Top the quinoa with scrambled eggs, cherry tomatoes, red bell pepper, and spinach.
  5. Sprinkle crumbled feta cheese over each bowl.
