Cajun Shrimp Rice

Ingredients
  

For the Shrimp
  • 1 lb shrimp peeled and deveined
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
For the Rice
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 bell pepper diced
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • Wooden spoon

Method
 

  1. In a bowl, toss the shrimp with Cajun seasoning until evenly coated.
  2. Heat olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
  3. In the same skillet, add the bell pepper, onion, and garlic. Cook for 3-4 minutes until softened.
  4. Stir in the rice, paprika, salt, and black pepper. Cook for 1 minute.
  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender.
  6. Return the shrimp to the skillet and stir to combine. Cook for 2 minutes until heated through.
