Brothy Vegetable Soup

Ingredients
  

Vegetables
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup green beans trimmed and cut
Broth and Seasonings
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in vegetable broth and add thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add green beans and cook for 5 more minutes.
  7. Taste and adjust seasoning if needed.
