Ingredients
  

For the Filling
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese cheddar or Monterey Jack
  • 1/4 cup diced bell peppers optional
  • 1/4 cup diced onions optional
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Taquitos
  • 8 small flour tortillas
  • 1 tbsp olive oil or cooking spray

Method
 

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper.
  3. Heat a skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are scrambled and fully cooked.
  4. Remove the skillet from heat and stir in the cheese, bell peppers, and onions (if using).
  5. Divide the egg mixture evenly among the tortillas, placing it along one edge. Roll the tortillas tightly around the filling.
  6. Place the taquitos seam-side down on the prepared baking sheet. Brush or spray lightly with olive oil.
  7. Bake for 12-15 minutes, or until the tortillas are golden and crispy.
  8. Serve warm with salsa, sour cream, or avocado.
