Blueberry Crumble Snack Bars

Ingredients
  

For the Crust and Crumble
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 0.75 cup brown sugar
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter melted
For the Blueberry Filling
  • 2 cups fresh blueberries
  • 0.25 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tsp cornstarch

Method
 

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, mix the flour, oats, brown sugar, baking powder, and salt. Stir in the melted butter until the mixture is crumbly.
  3. Press two-thirds of the crumble mixture into the bottom of the prepared pan. Set aside the remaining mixture for the topping.
  4. In another bowl, combine the blueberries, granulated sugar, lemon juice, and cornstarch. Spread this mixture evenly over the crust.
  5. Sprinkle the reserved crumble mixture over the blueberry filling.
  6. Bake for 30 minutes, or until the top is golden brown. Let cool completely before cutting into bars.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
