Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 2 ripe bananas mashed
  • 1 cup milk dairy or plant-based
  • 1 egg
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
Add-ins
  • 1 cup blueberries fresh or frozen

Method
 

  1. Preheat the oven to 375°F (190°C). Grease an 8x8-inch baking dish.
  2. In a mixing bowl, combine the oats, baking powder, and salt.
  3. In another bowl, mix the mashed bananas, milk, egg, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fold in the blueberries.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 30 minutes or until the top is golden and the center is set.
  8. Let cool before cutting into squares.
