For the Chicken
  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Glaze
  • 1 cup fresh blackberries
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon chopped fresh sage
  • 1 clove garlic minced

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the chicken thighs dry with paper towels. Place them in the prepared baking dish. Drizzle with olive oil, then season with salt and pepper.
  3. In a small saucepan, combine the blackberries, balsamic vinegar, honey, sage, and minced garlic. Cook over medium heat, stirring occasionally, until the blackberries break down and the sauce thickens slightly, about 5-7 minutes.
  4. Pour the blackberry glaze over the chicken thighs in the baking dish, ensuring they are evenly coated.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the glaze is bubbly and slightly caramelized.
  6. Serve the chicken thighs warm, spooning any extra glaze from the pan over the top.
