For the Black Eyed Peas
  • 1 lb dried black eyed peas rinsed and soaked overnight
  • 4 cups water
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic. Cook until softened.
  3. Add soaked black eyed peas, water, salt, and black pepper.
  4. Bring to a boil, then reduce heat and simmer for 1 hour or until peas are tender.
