  • 1 cup dried black-eyed peas rinsed and soaked overnight
  • 4 cups water
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until softened.
  3. Add soaked black-eyed peas, water, salt, and black pepper to the pot.
  4. Bring to a boil, then reduce heat and simmer for about 60 minutes, or until peas are tender.
  5. Adjust seasoning if needed and serve warm.
