- In a large bowl, toss the chicken pieces with cornstarch until evenly coated.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until golden and cooked through, about 5-7 minutes.
- In a small bowl, mix the mayonnaise, sweet chili sauce, sriracha, and honey to make the sauce.
- Add the cooked chicken to the sauce and stir to coat evenly.
- Divide the rice among four bowls. Top with the chicken, shredded lettuce, green onions, and sesame seeds.
