- Preheat the oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- Arrange the zucchini and tomato slices in alternating layers in the baking dish.
- In a small bowl, mix the Parmesan cheese, breadcrumbs, oregano, salt, and black pepper.
- Sprinkle the cheese mixture evenly over the zucchini and tomatoes. Drizzle with olive oil.
- Bake for 25 minutes, or until the top is golden and the vegetables are tender.
- Let cool for 5 minutes before serving.
