  • 2 bell peppers sliced (any color)
  • 1 large onion sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced bell peppers, onion, olive oil, oregano, salt, and black pepper. Toss to coat evenly.
  3. Spread the vegetable mixture in a baking dish and arrange the sausage links on top.
  4. Bake for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender.
  5. Serve hot.
