Base Ingredients
  • 1 cup pumpkin seeds cleaned and dried
  • 1 tbsp olive oil
Classic Salted
  • 1/2 tsp salt
Cinnamon Sugar
  • 1 tbsp sugar
  • 1/2 tsp cinnamon
Garlic Parmesan
  • 1/2 tsp garlic powder
  • 2 tbsp parmesan cheese grated
Chili-Lime
  • 1/2 tsp chili powder
  • 1/2 tsp lime zest

Method
 

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the pumpkin seeds with olive oil until evenly coated.
  3. Divide the seeds into four portions if making multiple flavors. Mix each portion with your chosen seasoning blend.
  4. Spread the seeds in a single layer on the baking sheet. Bake for 20 minutes, stirring halfway, until golden and crisp.
  5. Let cool before serving. Store in an airtight container for up to a week.

Notes

For extra crispiness, soak the seeds in salted water for an hour before drying and roasting.
