- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix the olive oil, lemon juice, thyme, oregano, salt, and black pepper. Coat the cod fillets with this mixture.
- Place the cod fillets on one side of the baking sheet.
- In another bowl, toss the broccoli, cherry tomatoes, and red bell pepper with olive oil, salt, and black pepper. Spread the vegetables on the other side of the baking sheet.
- Bake for 18-20 minutes, or until the cod is opaque and flakes easily with a fork.
- Serve the cod with the roasted vegetables.

Notes
You can substitute other white fish like haddock or halibut for the cod. Adjust baking time if using thicker fillets.
