For the Chicken and Asparagus
  • 4 boneless, skinless chicken breasts
  • 1 lb asparagus trimmed
For the Marinade
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, garlic, lemon zest, lemon juice, salt, and pepper.
  3. Place chicken breasts and asparagus on the baking sheet. Pour the marinade over them, ensuring even coating.
  4. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the asparagus is tender.
  5. Serve immediately.
