Baked Chicken and Spinach Stuffed Shells

Ingredients
  

For the Shells
  • 24 jumbo pasta shells
For the Filling
  • 2 cups cooked chicken shredded
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 cup spinach chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Sauce
  • 2 cups alfredo sauce
  • 1/2 cup mozzarella cheese shredded, for topping

  • 9x13 baking dish

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9x13 baking dish.
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a large bowl, mix the shredded chicken, ricotta, mozzarella, Parmesan, spinach, garlic powder, salt, and pepper.
  4. Spread half the Alfredo sauce on the bottom of the baking dish.
  5. Fill each pasta shell with the chicken and spinach mixture. Arrange them in the baking dish.
  6. Pour the remaining Alfredo sauce over the shells. Sprinkle with the extra mozzarella.
  7. Bake for 20-25 minutes until bubbly and golden on top.

Notes

For extra flavor, add a pinch of red pepper flakes to the filling. You can also substitute the Alfredo sauce with marinara for a different taste.
