Baked Barbecue Pork Chops with Potatoes

Ingredients
  

For the Pork Chops and Potatoes
  • 4 bone-in pork chops about 1-inch thick
  • 4 medium potatoes cut into wedges
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
For the Barbecue Sauce
  • 1 cup barbecue sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the barbecue sauce, apple cider vinegar, brown sugar, garlic powder, and onion powder.
  3. Toss the potato wedges with olive oil, salt, and pepper. Spread them in a baking dish.
  4. Place the pork chops on top of the potatoes. Pour the barbecue sauce mixture over the pork chops.
  5. Bake for 40-45 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  6. Let the pork chops rest for 5 minutes before serving.

Notes

For extra flavor, marinate the pork chops in the barbecue sauce for 30 minutes before baking.
