Bacon Egg Cheese Breakfast Quesadillas

Ingredients
  

For the Quesadillas
  • 4 slices bacon cooked and crumbled
  • 4 large eggs beaten
  • 1/2 cup shredded cheddar cheese
  • 2 large flour tortillas
  • 1 tbsp butter

Method
 

  1. Cook the bacon in a skillet until crispy. Remove, drain, and crumble.
  2. In the same skillet, scramble the beaten eggs until fully cooked. Remove and set aside.
  3. Heat a clean skillet over medium heat. Add butter and let it melt.
  4. Place one tortilla in the skillet. Layer half the cheese, scrambled eggs, and bacon on one half of the tortilla.
  5. Fold the tortilla over the filling. Cook for 2-3 minutes per side until golden and crispy.
  6. Repeat with the remaining tortilla and ingredients. Slice and serve warm.
