Ingredients
Scale
- 1.5 lbs fresh lobster
- 1 pound spaghetti
- 1/2 cup heavy cream
- 1/4 cup dry white wine
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons butter
- 1/4 cup chopped fresh parsley
- 1 lemon, zested and juiced
- Salt and freshly ground black pepper to taste
- Red pepper flakes (optional)
Instructions
- Fill a large pot with salted water and bring to a rolling boil. Carefully place the lobster in the boiling water and cook for 8-10 minutes, or until the shell turns bright red.
- Remove the cooked lobster from the pot and let it cool slightly. Extract the meat from the tail, claws, and body. Discard the shell. Roughly chop the lobster meat.
- Cook the spaghetti according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- In a large skillet, heat olive oil and butter over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant. Pour in the white wine and let it simmer for 2-3 minutes. Add the heavy cream, lemon zest, and lemon juice. Stir well. Season with salt and pepper.
- Add the cooked spaghetti to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce is too thick, add a little of the reserved pasta water. Gently fold in the chopped lobster meat and parsley. Heat through for another minute or two.
- Serve immediately. Garnish with extra parsley and a lemon wedge. Pair with crusty bread and a crisp white wine.
Notes
- Use fresh, high-quality lobster for the best flavor.
- Don’t overcook the lobster; it should be tender and succulent.
- Reserve pasta water to adjust the consistency of the sauce.
- Taste and adjust seasonings as needed; extra lemon juice can brighten the flavors.
- For an easy lobster pasta, use pre-cooked lobster meat if short on time.
- Add more red pepper flakes or hot sauce for a spicy kick.
- Include shrimp or scallops for a more diverse seafood flavor.
- Substitute the lobster with mushrooms or artichoke hearts for a vegetarian option.
