Instructions

  1. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large pan over medium heat. Add shallots and sauté until translucent, about 3-5 minutes.
  3. Add tomato paste and cook for 2-3 minutes, stirring constantly.
  4. If using vodka, pour into the pan and simmer for 1 minute. Stir in red pepper flakes.
  5. Pour in heavy cream and stir well. Reduce heat to low and simmer for 10 minutes, allowing the sauce to thicken.
