Instructions
- Prepare the Beef Filling: Heat vegetable oil in a large skillet over medium heat. Add onion and garlic, cook until softened (5 mins). Add ground beef, cook until browned, drain excess grease. Stir in curry powder, thyme, allspice, paprika, cayenne pepper (optional), and scotch bonnet pepper. Season with salt and pepper. Pour in beef broth and simmer for 15-20 minutes until thickened.
- Make the Patty Dough: In a large mixing bowl, combine flour, salt, and turmeric powder. Cut in shortening and cold butter until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough just comes together (do not overmix).
- Chill the Dough: Divide dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Assemble the Patties: Preheat oven to 375Β°F (190Β°C). On a floured surface, roll out one disc of dough to 1/8 inch thickness. Use a cookie cutter or bowl to cut circles (5-6 inches). Place a spoonful of cooled filling in the center.
- Seal and Crimp: Moisten edges of dough with water. Fold dough over filling to form a half-moon shape. Press edges together to seal. Crimp edges with a fork. Repeat with remaining dough and filling.
- Bake the Patties: Place patties on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown. Cool slightly before serving.

- Adjust the amount of scotch bonnet pepper to your liking. Remove seeds and membranes for milder flavor.
- Dough should be firm, not dry. Add more ice water if needed, a tablespoon at a time.
