Ingredients
- Meaty beef bones (knuckles, shanks)
- Onions
- Carrots
- Celery
- Bay leaves
- Thyme
- Peppercorns
- Water
Instructions
- Roast the Bones: Preheat oven to 400°F (200°C). Roast beef bones and vegetables on a baking sheet for 30-40 minutes until browned.
- Simmer the Broth: Transfer roasted bones and vegetables to a large stockpot. Add cold water to cover. Bring to a simmer, reduce heat, and simmer gently for 4-6 hours (or longer for more intense flavor). Skim off any foam.
- Strain the Broth: Strain broth through a fine-mesh sieve lined with cheesecloth. Discard solids. Let broth cool slightly.
- Store the Broth: Transfer cooled broth to airtight containers. Refrigerate for up to 5 days or freeze for longer storage.
Notes
- Roasting the bones and vegetables beforehand intensifies the broth’s flavor.
- Skimming regularly ensures a clearer, cleaner broth.
- A low and slow simmer is key to extracting maximum flavor.
- Season carefully, adding salt towards the end to avoid over-salting.
