Ingredients
- Chickpea Pasta
- Olive Oil
- Garlic
- Canned Chickpeas
- Fresh Herbs (Parsley, Basil, Oregano)
- Parmesan Cheese (optional)
- Salt
- Pepper
Instructions
- Bring a large pot of salted water to a rapid boil.
- Add the chickpea pasta to the boiling water and cook according to the package directions (usually 7-9 minutes).
- While the pasta is cooking, heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Rinse and drain a can of chickpeas. Add them to the pan with the garlic and oil. Cook for a few minutes, allowing the flavors to meld.
- Drain the chickpea pasta, reserving about ½ cup of the pasta water. Add the pasta to the pan with the chickpea and garlic mixture.
Notes
- Don’t Overcook: Chickpea pasta can become mushy if overcooked. Cook it al dente for the best texture.
- Reserve Pasta Water: The starchy pasta water helps to create a smooth and emulsified sauce.
- Add Lemon Juice: A squeeze of fresh lemon juice can brighten the flavors of chickpea noodle recipes.
- Experiment with Sauces: Try different sauces like pesto, marinara, or even a creamy avocado sauce for variety.
