Instructions

  1. Melt butter and olive oil in a large skillet over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, for 30-40 minutes until deeply caramelized and golden brown.
  2. While onions caramelize, cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  3. Add wine to the skillet with caramelized onions and scrape up any browned bits. Let wine reduce slightly, then add beef broth and simmer for 10-15 minutes.
  4. Stir in heavy cream and cook for another 5 minutes until the sauce thickens slightly. Taste and adjust seasoning as needed.
  5. Add cooked pasta to the skillet with the sauce. Toss to coat well. Stir in most of the Gruyère cheese, reserving some for topping. Add pasta water if sauce is too thick.
  6. Serve immediately, garnished with remaining Gruyère cheese and fresh thyme leaves.
