Description
Transform leftover beef into a comforting and flavorful pot pie with this easy recipe. Perfect for a hearty meal, this recipe reduces food waste and delivers a delicious twist on a classic dish.
Ingredients
Scale
- 2 cups leftover cooked beef, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 sheet of puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, and sauté until softened. Add the mixed vegetables and leftover beef to the skillet. Cook for about 5 minutes, stirring occasionally, until the vegetables are slightly tender and the beef is heated through.
- Sprinkle flour over the beef and vegetable mixture, stirring continuously to coat everything evenly. Gradually pour in the beef broth, stirring to avoid lumps. Add dried thyme, salt, and pepper. Bring the mixture to a simmer, and cook until the sauce has thickened, about 5-7 minutes.
- Preheat your oven to 375°F (190°C). Pour the beef and vegetable filling into a 9-inch pie dish or oven-safe skillet. Ensure the filling is evenly distributed.
- Unfold the puff pastry sheet and place it over the filling, gently pressing the edges to seal. Cut a few slits in the top of the pastry to allow steam to escape. Brush the top of the pastry with the beaten egg. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
Notes
- For best flavor, use high-quality leftover beef.
- Customize the vegetable mix with your favorites like mushrooms, potatoes, or celery.
- For a richer flavor, add a pinch of rosemary or a dash of Worcestershire sauce.
- Ensure the sauce is adequately thickened to prevent a soggy crust.
- Experiment with variations like adding sautéed mushrooms or shredded cheese for a unique twist.
