- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups beef broth
- 2 tablespoons all-purpose flour (optional, for thickening)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef shoulder on all sides until browned.
- Place chopped onions, carrots, and celery in the bottom of the crockpot.
- In a bowl, combine minced garlic, dried thyme, dried rosemary, salt, and pepper. Rub this mixture over the beef shoulder. Pour beef broth into the crockpot, ensuring the roast is partially submerged. Add the bay leaf.
- Cover the crockpot and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef shoulder is fork-tender.
- Remove roast. If desired, thicken gravy by whisking flour with cold water, then stirring into the crockpot and cooking until thickened.
